Parsleyed New Potatoes

  • ¼ cup butter
  • ¼ cup chopped onion
  • 1 cup vegetable broth
  • ½ cup chopped fresh parsley
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 1¼ lbs. small new potatoes


  • In a medium skillet over medium-high heat, melt the butter and cook the onion until tender, about 3 minutes. Add the broth, parsley, salt, and pepper, then place the potatoes in the skillet in a single layer. Bring to a boil, then cover and reduce heat to low.
  • Simmer about 20 minutes or until the potatoes are tender. Remove the potatoes to a serving bowl, then pour the remaining sauce over them to serve.
