Parsnips are sometimes called white carrots, and that’s what they look like.

- 3 cups sliced parsnips
- 1 1⁄2 cups heavy cream
- 2 Tbsp. grated Parmesan cheese
- 1 Tbsp. minced thyme
- 1⁄4 tsp. salt
- 1⁄8 tsp. ground black pepper
- Preheat oven to 400°F.
- Mix together all the ingredients and place in a small ovenproof dish. Bake for about 40 minutes or until the top is well browned and the parsnips are tender. Remove from the oven and let stand for 10 minutes before serving.
