A fresh summer treat—loaded with vitamin C and potassium—and nice and sweet!

- 1 cup sliced peaches in juice
- 2 Tbsp. confectioners' sugar
- ½ cup low-fat milk
- 1 tsp. vanilla extract
- 1 cup lowfat vanilla ice cream
- Purée the peach slices, confectioners' sugar, and milk in a blender until smooth. Add vanilla and ice cream and blend again until smooth.
- Pour into glasses and serve immediately.
