Peanut Butter Pancakes

- ½ cup sifted all-purpose flour
- 1 tsp. baking powder
- Pinch of salt
- 1 egg
- ½ cup milk
- 1 Tbsp. creamy peanut butter
- 4 tsp. butter, divided
- Mix together the flour, baking powder, and salt. Beat the egg and add to the milk. Mix with the flour mixture. Mix the peanut butter with 1 teaspoon melted butter and mix well. Add to the batter.
- Melt the remaining 3 teaspoons of butter in a nonstick pan or griddle. Pour ¼ cup of the batter into the pan. Heat until small bubbles form on the surface of the pancake. Then flip the pancake. Repeat with the remaining batter. No syrup is necessary for these treats.
