Peanut Butter Truffles
These simple, rich truffles have a subtle, nutty flavor with a chewy date base to hold them together and provide a nutrient-dense sweetness.

- 16 Medjool dates
- 2 Tbsp. peanut butter
- 2 Tbsp. coconut oil
- 1 tsp. ground cinnamon
- 3⁄4 cup almond flour
- 1⁄2 cup shredded coconut
- In a food processor or high-powered blender, process dates until coarsely chopped. Add the peanut butter, coconut oil, cinnamon, and flour and blend until smooth.
- Form the dough into 1-inch balls and roll in coconut. Store covered in the refrigerator until ready to serve.
