Pear and Walnut Salad
Avoid a soggy salad by waiting until serving time to add the dressing. If you feel like there is going to be salad left over, you may want to dress your salad in batches to keep the greens fresh and crisp.

- 8 cups chopped spinach
- 2 medium pears, sliced
- 1⁄2 cup chopped walnuts
- 1⁄2 cup goat cheese crumbles
- 1⁄4 cup balsamic vinaigrette
- In a large bowl, toss together spinach, pears, walnuts, and goat cheese.
- Just before serving, toss with dressing.
