Pears and Goat Cheese Wrapped in Prosciutto
Prosciutto is available at most deli counters. Use a good-quality Parmesan to enhance the flavors of this delicious salad.

- 3 ripe pears, peeled
- 6 slices prosciutto
- Extra-virgin olive oil
- ¼ tsp. salt
- ¼ tsp. freshly ground black pepper
- 2 Tbsp. goat cheese
- 4 cups arugula
- Cut each pear in half and remove the core. Toss the pear halves in about 2 tablespoons of olive oil until evenly coated and season with salt and pepper. Heat a grill pan until very hot, almost smoking. Mark each side of the pear slices with dark brown grill marks, using tongs to turn. This should take only a few minutes on each side. (If it takes longer, the pan needs to be hotter.)
- Preheat broiler to low. Place 1 teaspoon of goat cheese where the core of the pear was. Wrap a piece of prosciutto around the middle of each pear. Place all the wrapped pears on a lightly oiled baking sheet and cook for about 2 to 3 minutes on each side.
- Serve hot on a bed of arugula and drizzle with a bit more olive oil.
