Pears Poached in Red Wine

- 4 firm Bosc pears, peeled with stems intact
- 3 Tbsp. lemon juice
- 1 /
2cups dry red wine
- ¾ cup packed brown sugar
- 1 pint vanilla ice cream
- Preheat oven to 350°F.
- In a heavy saucepan, combine the lemon juice, wine, and sugar and bring to a simmer. Cook 7 to 8 minutes, or until the sugar is dissolved. Lay the pears next to one another in a baking pan. (Use a pan that will hold the pears snugly.) Pour the simmering liquid over the pears and cover tightly with aluminum foil. Make slits in the foil.
- Bake for about 10 minutes. Uncover and turn the pears over. Re-cover and cook for 10 to 15 minutes longer, or until the pears are tender and the liquid is slightly reduced.
- Serve warm with vanilla ice cream.
