Pecan Sandies
If a flavoring called Vanilla Butter Nut is available, use 1 teaspoon of that in place of 1 teaspoon of the vanilla. It gives a buttery and nutty flavor that enhances these cookies.

Ingredients
- 1⁄2 cup unsalted butter
- 1⁄2 cup vegetable oil
- 1⁄4 cup granulated sugar
- 1⁄4 cup brown sugar
- 1⁄2 cup confectioners’ sugar
- 1 large egg
- 2 tsp. vanilla extract
- 2 cups all-purpose flour
- 1⁄2 tsp. baking soda
- 1⁄2 tsp. cream of tartar
- 1⁄2 tsp. salt
- 1 cup chopped pecans
- 1⁄4 cup turbinado sugar
Directions
- Cream together butter and oil until very well blended. Beat in granulated sugar and brown sugar until very smooth. Beat in confectioners’ sugar and egg. Stir in vanilla.
- Combine flour, baking soda, cream of tartar, and salt; stir into creamed mixture. Fold in pecans. Chill overnight.
- Preheat oven to 375°F.
- Roll teaspoons of dough into balls and then roll in turbinado sugar. Flatten slightly with a glass dipped in turbinado sugar. Place 2 inches apart on ungreased baking sheets.
- Bake 10 to 12 minutes, or until edges are golden brown. Cool.
