Pepperoni Pizza Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 yellow bell pepper, chopped
  • 1 pound 95% lean ground beef
  • 1 can (14.5 oz.) petite diced tomatoes
  • 1 can (15 oz.) chili beans
  • 1 can (15 oz.) dark red kidney beans, drained and rinsed
  • 1 can (14 oz.) pizza sauce
  • 1 package (6 oz.) pepperoni slices, halved
  • 1⁄2 cup water
  • 1 tablespoon chili powder
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon pepper
  • 2 cups mozzarella cheese, shredded

Directions

  • In large skillet over medium heat, add olive oil. Once warmed, sauté onion and bell pepper until tender. Add beef; cook until internal temperature reaches 165°F. Drain excess juices. Transfer to crockpot.
  • Add tomatoes, chili beans, kidney beans, pizza sauce, pepperoni slices, water, chili powder, salt and pepper.
  • Cook on low 4 to 6 hours. Top with mozzarella cheese; allow cheese to melt.
  • Serve and refrigerate leftovers.
