- 8½ cups water
- 2 Tbsp. extra-virgin olive oil
- 1 Tbsp. sea salt
- 2 cups cornmeal
- Bring the water and olive oil to a boil in a large pot over medium heat, and season with the sea salt. Pour the cornmeal into the pot, and whisk vigorously to prevent clumping. Keep stirring for 30 minutes or until polenta becomes extremely thick. Remove the polenta from the heat, and move to a covered dish.
- Let stand, covered, for 10 minutes before serving.
