Perfect Sugar-Pickled Berries
A drizzle of these sweet and salty brined berries may be the best bite of summer you’ve tasted all year. Store fresh blueberries and/or blackberries in the refrigerator with this quick pickling trick. Serve atop grilled pork or chicken, or toss with angel food cake and whipped cream for a decadent fruit treat.

- ½ cup champagne vinegar
- ½ cup champagne
- ¼ cup sugar
- 1 Tbsp. kosher salt
- 1 sprig fresh mint
- ½ lb. fresh blackberries and/or blueberries
- In a small saucepan over medium-high heat, cook vinegar, champagne, sugar, and salt together until mixture begins to simmer and sugar dissolves.
- Place mint leaves and berries in a 1-pint mason jar. Cover with brine. Twist lid on tightly.
- Refrigerate overnight. Store in refrigerator and enjoy within 4 weeks.
