Peruvian Garlic Rice
This garlicky white rice is a daily side dish in Peru, and itʼs so fluffy when it is perfectly cooked that you could probably count every grain.

- 2 Tbsp. vegetable oil
- 3 garlic cloves, mashed
- 2 cups white rice
- 1 tsp. salt
- 3 cups boiling water
- 1 Tbsp. chopped scallions
- Heat the oil and garlic in a medium saucepan over medium heat, about 3 minutes. Stir in the rice and salt, and add the boiling water.
- Cover tightly, reduce heat to low, and cook undisturbed until the liquid is absorbed, about 20 minutes. Fluff with a fork, top with scallions, and serve.
