Peruvian Parsley Salsa

This salsa goes well with grilled meats or soups.

Ingredients

  • 1 cup parsley leaves
  • 1 cup olive oil
  • 3 fresh ají amarillo or serrano chilies
  • 1 tsp. salt
  • ½ tsp. ground black pepper

Directions

  • In a blender, process all ingredients until smooth or slightly chunky, as you wish. Serve immediately.
