Pesto Quinoa Bowl
Pesto and quinoa are two of the tastiest combinations ever discovered. Savory and simple, this meat-free bowl also tastes great with grilled chicken atop.

- 1 1⁄2 cups cooked quinoa
- 1⁄4 cup prepared pesto
- 1 large egg, hard-boiled and cut in half
- 2 Tbsp. pine nuts, toasted
- Heat quinoa in microwave, if needed. Stir in pesto until well mixed.
- Top with egg, sprinkle with pine nuts and serve.
