A great way to liven up plain old rice.

- 1 cup long-grain white rice
- ½ cup store-bought pesto
- ½ tsp. salt
- ¼ tsp. ground black pepper
- Place the rice and 2 cups of cold water in a small pot. Bring to a simmer, then reduce heat to the lowest setting. Cover, and cook for exactly 18 minutes. Remove from heat and let sit for 5 minutes, covered.
- Add the pesto to the rice and season with salt and pepper. Serve.
