Pickled Deviled Eggs

Pickling hard-cooked eggs before making them deviled adds additional flavor, while the beets add a beautiful color to the exterior of the egg whites.

Ingredients
- 1 can (15 oz.) pickled beets
- 1 cup white vinegar
- 1⁄2 cup water
- 2 tbsp. sugar
- 3⁄4 tsp. salt, divided
- 6 whole hard cooked eggs, peeled
- 3 tbsp. mayonnaise
- 2 tsp. Dijon mustard
- 1⁄2 tsp. hot pepper sauce
- 1⁄4 tsp. salt
Directions
- In a large bowl combine the liquid from the pickled beets (save the beets for another use), vinegar, water, sugar and ½ teaspoon salt. Add eggs and refrigerate for at least 4 hours or overnight.
- Remove the eggs from the brine, pat dry. Discard brine.
- Split eggs in half lengthwise. Remove yolks and add to a bowl; place whites on a serving platter.
- Add mayonnaise, mustard, vinegar, hot sauce and remaining ¼ teaspoon salt to the yolks; combine ingredients until smooth.
- Spoon or pipe yolk mixture into each white.
- Refrigerate leftovers.
