Pillow-Top Chocolate Frosting

Makes: 2 cups
- ¼ cup butter, softened
- 1½ cups confectioners’ sugar, divided
- 1 tsp. vanilla extract
- 3 oz. semisweet chocolate, melted and cooled
- ¼ tsp. salt
- 2 egg whites
- In a bowl, cream together the butter and ¾ cup sugar until light. Add the vanilla, melted chocolate, and salt. Mix well. In another bowl, beat the egg whites until stiff peaks form.
- Fold the remaining ¾ cup sugar, 2 tablespoons at a time, into the egg whites. Fold in the chocolate mixture gently, just enough to blend.
