Pillow-Top Chocolate Frosting

Makes: 2 cups


  • ¼ cup butter, softened
  • 1½ cups confectioners’ sugar, divided
  • 1 tsp. vanilla extract
  • 3 oz. semisweet chocolate, melted and cooled
  • ¼ tsp. salt
  • 2 egg whites


  • In a bowl, cream together the butter and ¾ cup sugar until light. Add the vanilla, melted chocolate, and salt. Mix well. In another bowl, beat the egg whites until stiff peaks form.
  • Fold the remaining ¾ cup sugar, 2 tablespoons at a time, into the egg whites. Fold in the chocolate mixture gently, just enough to blend.
