Pimento Cheese on a Mini Waffle with a Horseradish Pickle Chip

- 1⁄2 pound Dietz and Watson C-Sharp Cheddar Cheese, shredded
- 1⁄2 pound Dietz and Watson Buffalo Wing Cheddar Cheese, shredded
- 1 jar sweet horseradish or bread and butter pickle slices
- 1 cup chopped pimentos
- mini waffles
- 1 tablespoon chives thinly sliced for toppings
- In a medium bowl mix together cheese, mayonnaise, pimentos. Set in refrigerator for 1 hour. (Can be stored in an airtight container in the refrigerator for up to a week.)
- Place waffle, pimento cheese, top with chives, then pickle, add second mini waffle.
