Piña Colada “Ice Cream”

This recipe updates a tropical classic by adding two more layers of rich flavor.

  • 1 cup dates
  • 2 cups cashews
  • 1⁄2 cup young coconut meat
  • 1 cup pineapple juice


  • Remove the pits from the dates. Homogenize the ingredients in a heavy-duty juicer.
  • There are three ways to freeze this ice cream: 1) You can use an ice cream maker, simply following the directions supplied with the appliance. 2) The second method is to place the ingredients in a bowl, cover with plastic wrap, and put it in the freezer. Stir the ingredients every few hours to help it freeze evenly. 3) A third method is to freeze the mixture, and then chop it into chunks. Run the chunks through a heavy-duty homogenizing juicer or a high-speed blender.
