Ingredients

  • 1 pound ground Italian sausage
  • 1 can (20 oz.) pineapple tidbits in juice, divided
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz.) diced tomatoes
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (6 oz.) tomato paste
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 cup water
  • 1⁄2 cup cheddar cheese, shredded
  • 1⁄2 cup sour cream

Directions

  • In large skillet over medium heat, cook sausage, stirring to crumble, until an internal temperature reaches 160°F. Transfer to crockpot.
  • Add pineapple juice (reserving pineapple tidbits in refrigerator), onion, garlic, tomatoes, black beans, tomato paste, chili powder, cumin and water.
  • Cook on low 6 to 8 hours, adding reserved pineapple tidbits during last hour of cooking time; or cook on high 4 to 5 hours, adding reserved pineapple tidbits during the last 30 minutes of cooking time.
  • Serve with cheese and sour cream. Refrigerate leftovers.
