Pisco is a Peruvian or Chilean brandy. The classic presentation of this drink is to top it with a foamy beaten egg white. If you are concerned about the safety of the raw egg, leave it out.

- 3 oz. Pisco
- 1 oz. lime juice
- 1½ oz. simple syrup
- 5 ice cubes
- ⅓ egg white, lightly mixed
- 1 drop Angostura bitters
- Process Pisco, lime juice, syrup, ice cubes, and egg white in the blender until frothy, about 15 seconds.
- Serve in a short glass with a drop of Angostura bitters on top.
