Pizza with Mozzarella and Olives
You can buy pizza dough from almost any supermarket, bakery, or pizza parlor. When you top the pizza with a good-quality sauce, extra veggies, and goat cheese, you have a marvelous lunch or supper.

- 1 lb. pizza dough
- 1 cup tomato sauce
- 1 lb. fresh mozzarella, thinly sliced
- 10 Greek olives, pitted
- 2 tsp. olive oil
- 1⁄2 cup shredded Parmesan cheese
- Preheat oven to 475°F. Roll out the pizza dough into 2 very thin circles, about 12 inches each. Spread with sauce.
- Top with olives and drizzle olive oil over top. Spread the mozzarella over the tops and sprinkle with Parmesan. Bake for 15 minutes, or until the crust is brown, the cheese melts, and the topping bubbles. Serve hot.
