Plain Boiled Rice

  • 2 cups raw short-grained rice
  • 2½ cups cold water


  • Wash the rice well in a colander with several changes of water. After water runs clear, let the rice drain in a sieve or colander for 10 minutes. Place rice in a saucepan and add the water. Cover, and bring to a boil over high heat (standing by to watch that it does not boil over); reduce the heat to low and let the rice simmer for 15 minutes.
  • Remove the saucepan from the heat and let it stand, still covered, for 10 minutes to allow the rice to cook in the residual steam. Uncover and fluff the rice with a fork or chopsticks. If you’re not ready to serve, place a towel over the saucepan to absorb any extra moisture, and then replace the lid.
