Plant-based Pineapple Fried Rice

This vegan meal is sure to be loved by all. The sweet pineapple pairs deliciously with the tender vegetables. Make the brown rice ahead of time or use leftover rice for a meal that comes together in under 30 minutes.

  • 2 tbsp. olive oil
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 1 red bell pepper, chopped
  • 1⁄2 cup frozen corn
  • 1⁄2 cup frozen peas
  • 3 cups cooked brown rice
  • 1⁄4 cup coconut aminos
  • 1⁄2 tbsp. sriracha
  • 2 cups pineapple, chopped
  • 2 green onions, chopped
  • 1⁄4 cup peanuts, chopped

  • In a wok over medium heat, add oil. Once warmed, add onion and cook until lightly browned. Add garlic, carrot and bell pepper. Cook until tender.
  • Add corn, peas, brown rice, coconut aminos and sriracha. Cook until combined and warmed.
  • Add pineapple and cook 1-2 minutes.
  • Serve fried rice with green onions and peanuts. Refrigerate leftovers.
