Plum Pineapple Butter
Plum delicious! Plums contain lutein, which is good for your eyes!

- 1½ lbs. plums
- 1 can (8 oz.) crushed pineapple in juice, undrained
- 2 Tbsp. honey
- 2 tsp. lemon juice
- ½ tsp. ground cardamom
- ¼ tsp. ground ginger
- Pit and quarter plums. Combine all ingredients in a large, heavy saucepan. Bring to a boil over medium heat. Reduce heat and simmer until plums are tender, about 10 minutes.
- Pour hot mixture into blender. Process until smooth. Return mixture to saucepan. Cook over medium heat until thickened, about 15–20 minutes. Stir frequently to prevent scorching. Serve warm or chilled.
