Poached Pear Sorbet
This is a great way to save leftover poached pears.

- 1⁄2 cup sugar
- 1⁄4 cup water
- 3 cups poached pear purée
- 1⁄4 cup lemon juice
- Combine sugar and water in a saucepan and heat just until sugar dissolves. Remove from heat and chill.
- Combine chilled sugar syrup, pear purée, and lemon juice.
- Freeze in an ice-cream freezer according to manufacturer’s instructions.
