Poached Salmon with Béarnaise Sauce

Ingredients

  • 1⁄2 cup water
  • 1⁄4 cup white wine
  • 2 salmon steaks
  • 1⁄4 cup mayonnaise
  • 2 Tbsp. lemon juice
  • 1 Tbsp. Dijon mustard
  • 1 tsp. sugar
  • 1 tsp. tarragon
  • 1⁄4 tsp. salt
  • 1⁄4 tsp. ground black pepper
  • 4 sprigs fresh dill

Directions

  • In skillet, bring water and wine to a gentle simmer. Add salmon and cook without boiling for 8 to 10 minutes or until fish flakes easily when tested with a fork. Divide steaks in half and arrange on warmed plates.
  • In small saucepan, whisk together mayonnaise, lemon juice, mustard, sugar, and tarragon. Cook over medium-low heat, whisking, for about 3 minutes or until warmed through but not boiling. Season with salt and pepper. Spoon over salmon. Garnish with dill.
