Poires au Vin (Pears Poached in Wine)

Pears poached in wine are a great way to finish a meal on a lighter note.

- 1 bottle (25 oz.) red wine
- 1 vanilla pod
- 3 cloves
- 2 star anise pods
- 3 Tbsp. honey
- 4 pears, peeled
- In a medium saucepan, bring the wine to a boil over medium-high heat. Slice the top outer layer of the vanilla pod and add it to the wine with the cloves and the star anise pods. Add the honey and stir with a wooden spoon.
- Using a slotted spoon, put each pear in the boiling wine. Reduce the heat to low and simmer for 25 minutes. Transfer the pears and the cooking liquid into a serving bowl. Take the vanilla pod out, use a teaspoon to scrap the seeds out, and put them back in the wine. Put in the refrigerator 2 hours before serving.
- Serve the pears with a ladleful of sweet boiled wine.
