Polenta with Butter and Cheese

Polenta is delicious with stews, ragouts, and tomato-based sauces. You can use medium or course ground cornmeal to make polenta.

  • 4 cups water
  • 1 tsp. salt
  • 1 cup polenta
  • ½ cup grated Parmesan cheese
  • 1 Tbsp. butter


  • In a medium saucepan over high heat, bring water to a boil. Whisking constantly with a stiff wire whisk, gradually pour cornmeal into water in a steady stream, whisking out any lumps. Continue whisking constantly until mixture thickens noticeably.
  • Reduce heat to a very low simmer; stir regularly with a wooden spoon until thickened, about 25 minutes.
  • Stir in cheese and butter; remove from heat. Serve immediately.
