Pork Corn Dogs

These taste just like corn dogs from the state fair, but they’re better for you! Your kids will love them.

  • 1 cup all-purpose flour
  • 2 Tbsp. sugar
  • 1 1⁄2 tsp. baking powder
  • 1⁄4 tsp. salt
  • 2⁄3 cup cornmeal
  • 3 Tbsp. vegetable oil
  • 1 large egg
  • 3⁄4 cup skim milk
  • 1 lb. lower-fat hot dogs


  • Preheat oven to 350°F. Spray a cookie sheet with nonstick cooking spray and set aside.
  • In a medium bowl, sift together the flour, sugar, baking powder, and salt. Stir in the cornmeal. Using a pastry blender or two knives, cut in the oil until the mixture resembles coarse meal. In a separate bowl, whisk together the egg and milk until blended and stir into the cornmeal mixture, mixing until blended.
  • Insert a wooden skewer into the end of each hot dog. Working in batches, coat the hot dogs evenly with the batter and arrange on prepared cookie sheet.
  • Bake for 20 minutes or until batter is lightly browned. Serve immediately.
