Pork Corn Dogs
These taste just like corn dogs from the state fair, but they’re better for you! Your kids will love them.

- 1 cup all-purpose flour
- 2 Tbsp. sugar
- 1½ tsp. baking powder
- ¼ tsp. salt
- ⅔ cup cornmeal
- 3 Tbsp. vegetable oil
- 1 large egg
- ¾ cup skim milk
- 1 lb. lower-fat hot dogs
- Preheat oven to 350°F. Spray a cookie sheet with nonstick cooking spray and set aside.
- In a medium bowl, sift together the flour, sugar, baking powder, and salt. Stir in the cornmeal. Using a pastry blender or two knives, cut in the oil until the mixture resembles coarse meal. In a separate bowl, whisk together the egg and milk until blended and stir into the cornmeal mixture, mixing until blended.
- Insert a wooden skewer into the end of each hot dog. Working in batches, coat the hot dogs evenly with the batter and arrange on prepared cookie sheet.
- Bake for 20 minutes or until batter is lightly browned. Serve immediately.
