Pork Roast with Cranberry Sauce

This sweet and tart roast makes a festive main course.

  • 1 medium onion, peeled and thinly sliced
  • 1¼ lbs. pork loin
  • 2 Tbsp. sweetened dried cranberries
  • 1 cup cranberry sauce


  • Place the onion slices on the bottom of a 4-quart slow cooker. Top with the pork, then the dried cranberries, and finally the cranberry sauce to cover the whole roast.
  • Cover and cook on low for 8 hours. Remove the pork and slice it. Discard the cooking liquids.
