Pork Tenderloin with Fennel

- 1 Tbsp. olive oil
- 1 sweet onion, peeled
- 4 lbs. pork tenderloin, excess fat removed
- 4 bulbs fennel, cubed
- 1 tsp. ground black pepper
- ½ tsp. kosher salt
- Place the pork into an oval 6- to 6½-quart slow cooker. Top with remaining ingredients. Cook on low for 8 hours.
