Pork Vindaloo

Ingredients
- 2 teaspoons paprika
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1⁄2 teaspoon whole black peppercorns
- 1 teaspoon ground turmeric
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon ground cardamom
- 1⁄2 teaspoon ground mustard
- 3 dry red chile peppers
- 3 tablespoons brown sugar
- 1⁄4 teaspoon salt
- 2 tablespoons white vinegar
- 2 cups water
- 2 pounds pork loin, cut into 1” cubes
- 2 tablespoons vegetable oil
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 1 white onion, sliced
- 3 cups jasmine rice, cooked
Directions
- In a bowl, blend all dry spices, chiles, brown sugar, salt, white vinegar and ⅓ cup water until smooth. Add pork and toss. Refrigerate for 2 hours, mixing several times.
- In a Dutch oven, heat oil, then sauté garlic and ginger for 30 seconds. Add onion and cook 3-5 minutes.
- Add pork and marinade and continue to cook 7-9 minutes. Pour in remaining water and simmer 25-30 minutes, until pork is tender (or until internal temperature is 165°F).
- Serve with jasmine rice.
