Pork Vindaloo

Ingredients

  • 2 teaspoons paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1⁄2 teaspoon whole black peppercorns
  • 1 teaspoon ground turmeric
  • 1⁄2 teaspoon ground cumin
  • 1⁄2 teaspoon ground cardamom
  • 1⁄2 teaspoon ground mustard
  • 3 dry red chile peppers
  • 3 tablespoons brown sugar
  • 1⁄4 teaspoon salt
  • 2 tablespoons white vinegar
  • 2 cups water
  • 2 pounds pork loin, cut into 1” cubes
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 white onion, sliced
  • 3 cups jasmine rice, cooked

Directions

  • In a bowl, blend all dry spices, chiles, brown sugar, salt, white vinegar and ⅓ cup water until smooth. Add pork and toss. Refrigerate for 2 hours, mixing several times.
  • In a Dutch oven, heat oil, then sauté garlic and ginger for 30 seconds. Add onion and cook 3-5 minutes.
  • Add pork and marinade and continue to cook 7-9 minutes. Pour in remaining water and simmer 25-30 minutes, until pork is tender (or until internal temperature is 165°F).
  • Serve with jasmine rice.
