Pressure Cooker Boiled Peanuts
Make this Southern specialty at home with a pressure cooker. You must use raw or "green" peanuts with their shells for this recipe. They are available in peanut-growing regions of the southern United States or online.

- 2 lbs. raw peanuts with shell
- 3 quarts water
- ⅓ cup salt
- Rinse the peanuts under cold water then place in the pressure cooker. Add 3 quarts of water and salt. Lock the lid in place; bring to 10 pounds of pressure, or a medium setting, and cook for 45 minutes. Remove from the heat and allow pressure to release naturally.
- Let the peanuts cool in the water, then drain.
- Remove the shells before eating.
