Pressure Cooker Broccoli in Lemon-Butter Sauce

For a quick and elegant dish, steam broccoli florets in a pressure cooker and drizzle with a simple sauce made with butter, lemon, and Dijon mustard.

  • 4 cups broccoli florets
  • 1⁄4 tsp. salt
  • 1 cup water
  • 4 Tbsp. butter, melted
  • 1 Tbsp. fresh lemon juice
  • 1⁄2 tsp. Dijon mustard
  • 1⁄8 tsp. black pepper


  • Put the broccoli, salt, and water in the pressure cooker. Lock the lid into place and bring to low pressure; maintain pressure for 2 minutes.
  • Meanwhile, in a large bowl, whisk together the butter, lemon juice, and mustard.
  • Remove the pressure cooker from the heat, quick-release the pressure, and remove the lid. Using a slotted spoon transfer the broccoli to the bowl with the butter mixture and toss to coat. Sprinkle with black pepper.
