Serves: 6

  • 2 Tbsp. olive oil
  • 1⁄2 onion, diced
  • 2 cloves garlic, minced
  • 1⁄2 tsp. red pepper flakes
  • 1 can (28 oz.) diced tomatoes
  • 1⁄2 tsp. sugar
  • 1 Tbsp. tomato paste
  • 1⁄3 cup water
  • 1 Tbsp. fresh lemon juice
  • 2 Tbsp. fresh basil, chopped
  • 1 1⁄2 tsp. salt
  • 1⁄2 tsp. pepper

  • In a pressure cooker over medium-high heat, heat oil. Add onion and sauté until soft and translucent, about 7 minutes. Add the garlic and red pepper flakes and sauté for an additional 30 seconds. Stir in the tomatoes, sugar, tomato paste, and water. Lock the lid into place and bring to high pressure. Once the pressure is achieved, turn the heat to low and cook for about 5 minutes.
  • Remove from the heat and allow pressure to release naturally. Stir in the lemon juice, basil, salt, and pepper.
