Pressure Cooker Mashed Sweet Potatoes
A pressure cooker does the bulk of the work in preparing this delicious and colorful dish.

- 1 cup water
- 5 cups sweet potatoes, peeled and cubed
- 1 tsp. chopped thyme
- 4 Tbsp. butter
- ¼ cup vegetable stock
- ⅛ cup orange juice
- 2 Tbsp. maple syrup
- 1 tsp. salt
- Add water, sweet potatoes, and thyme to the pressure cooker. Lock the lid into place and bring to high pressure. Turn heat to low and cook 5 minutes. Remove from heat and allow pressure to release naturally for 20 minutes.
- Drain the sweet potatoes in a colander. Add the butter, stock, orange juice, and maple syrup to the pressure cooker, and heat until the butter has melted. Remove from the heat and add the sweet potatoes. Mash with a potato masher. Season with salt and transfer to a serving dish.
