Pressure Cooker Rapini
Rapini is a pleasantly bitter vegetable in the cabbage and turnip family. For this recipe, steam it quickly in a pressure cooker and then sauté the cooked rapini with garlic and shallots.

- 1 lb. rapini, ends trimmed
- 1 tsp. salt
- 1 cup water
- 2 Tbsp. olive oil
- 2 cloves garlic, sliced
- 2 shallots, sliced
- ½ tsp. pepper
- Put the rapini, salt, and water in the pressure cooker. Lock the lid and bring to low pressure; maintain pressure for 2 minutes. Remove from heat, quick-release the pressure, remove the lid. Drain and transfer to a bowl. Wipe out the pressure cooker with a paper towel.
- In the cleaned pressure cooker over medium-high heat, heat the olive oil. Add the garlic and shallots; sauté for 1 minute, stirring constantly. Add the rapini and sauté for an additional minute, until heated through and coated with the olive oil mixture. Season with pepper.
