Pressure Cooker Spaghetti Squash
Spaghetti squash cooks very quickly in a pressure cooker. Here we dress the spaghetti-like strands with olive oil and salt. It is also very good with tomato sauce.

- 2 lb. spaghetti squash, halved lengthwise, seeds discarded
- ½ cup water
- 1 Tbsp. olive oil
- 1 tsp. salt
- Place the squash cut-side up in the steamer basket of a pressure cooker and add water. Lock the lid into place and bring to high pressure; maintain pressure for 10 minutes. Remove from the heat and quick-release pressure.
- When squash is cool enough to handle, use a large spoon to scoop the strands of "spaghetti" from the squash and place in a medium bowl. Drizzle with olive oil and sprinkle with salt before serving.
