Prickly Pear Juice
You can find prickly pear in many colors . . . red, green, orange, and yellow. Serve slices of the fruit in salads or eat with a few drops of lime juice. Some say it is good for hangovers.

- 6 red prickly pears
- 4 cups water
- 1⁄4 cup sugar
- Juice of 2 limes
- Peel the fruits, but do not hold them with your hands because they have tiny thorns. Cut into pieces and process with 4 cups water, sugar, and lime juice. Strain and pour in a jar, or serve immediately.
