Prosciutto with Melon

This is an excellent summery taste for the first course in a big eggy breakfast.

  • 1⁄2 cantaloupe or 1⁄4 honeydew melon, skinned and cut into 4 slices
  • Juice of 1⁄2 lime
  • 4 paper-thin slices prosciutto
  • 4 slices fresh lime


  • Arrange the melon on a platter. Sprinkle with lime juice, wrap with prosciutto, and serve.
