Pumpkin Applesauce Bread

Ingredients

  • 2 cups sugar
  • ⅓ cup blackstrap molasses
  • 1 cup canned pumpkin
  • 1 cup applesauce
  • ⅔ cup vegetable oil
  • 3 large eggs
  • ⅓ cup plain low-fat yogurt
  • 3⅔ cups all-purpose flour
  • 1½ tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1 tsp. vanilla extract
  • 1 cup chopped walnuts

Directions

  • Preheat oven to 350°F.
  • Combine sugar, molasses, pumpkin, applesauce, oil, eggs, and yogurt in a large mixing bowl. Beat at medium speed using an electric mixer.
  • Sift flour, baking powder, baking soda, cinnamon, and nutmeg together. Add gradually to first mixture, beating after each addition. Add vanilla and nuts. Mix well.
  • Pour into two well-greased 9" × 5" loaf pans. Bake for 60 minutes.
  • Cool in pans for 10 minutes and then remove from pans. Wrap in foil and store overnight for best flavor.
