Pumpkin Coconut Bisque

Healthy and hearty, this flavorful pumpkin soup is wonderful served with fresh butter bread and a crisp salad to round out the meal.

  • 2 Tbsp. olive oil
  • 1 medium sweet onion, peeled and diced
  • 3 Tbsp. minced garlic
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 cup whole milk
  • ¼ cup maple syrup
  • 4 cups pumpkin puree
  • ¼ tsp. sea salt
  • 1 tsp. pumpkin pie spice
  • ¼ ground black pepper


  • Heat olive oil in a large saucepan over medium heat. Add onion and garlic and sauté for 2-3 minutes, or until aromatic and translucent. Add broth, coconut and whole milk, syrup, pumpkin, salt, and pumpkin pie spice. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally.
  • Remove soup mixture to a blender or use an emulsion blender to purée the soup. Return mixture to the pot and continue to cook over low heat for 10 minutes. Season with pepper before serving.
