Pumpkin Coconut Bisque
Healthy and hearty, this flavorful pumpkin soup is wonderful served with fresh butter bread and a crisp salad to round out the meal.

Ingredients
- 2 Tbsp. olive oil
- 1 medium sweet onion, peeled and diced
- 3 Tbsp. minced garlic
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 cup whole milk
- ¼ cup maple syrup
- 4 cups pumpkin puree
- ¼ tsp. sea salt
- 1 tsp. pumpkin pie spice
- ¼ ground black pepper
Directions
- Heat olive oil in a large saucepan over medium heat. Add onion and garlic and sauté for 2-3 minutes, or until aromatic and translucent. Add broth, coconut and whole milk, syrup, pumpkin, salt, and pumpkin pie spice. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally.
- Remove soup mixture to a blender or use an emulsion blender to purée the soup. Return mixture to the pot and continue to cook over low heat for 10 minutes. Season with pepper before serving.
