Purple Pancakes

  • 2 cups blueberries, pureed
  • 2 cups prepared pancake batter
  • 1 Tbsp. vegetable oil


  • In a large bowl, mix the blueberries and pancake batter together.
  • Heat the oil in a large griddle or skillet over medium-high heat.
  • Pour batter by 1⁄4 cupfuls on the griddle. Cook until bubbles form on the surface, then turn and cook until lightly browned, about 3 minutes per side.
