Queso con Chili
The only secret to this recipe is to use processed cheese food, simply because it melts perfectly and there’s no danger that the recipe can be overcooked. Make sure you have tons of crisp tortilla chips on hand for dipping.

- 1 package (8 oz.) processed American cheese food
- 1 cup shredded pepper jack cheese
- 1 can (14 oz.) tomatoes with green chiles, undrained
- ½ cup sour cream
- Cube cheese food and place in microwave-safe bowl along with pepper jack cheese and undrained tomatoes. Heat on high power for 2–3 minutes, stirring twice during cooking time, until mixture is melted and smooth. Stir in sour cream and serve.
