This garlicky mayonnaise is delicious served with grilled asparagus, chilled artichoke leaves, boiled fingerling potatoes.

- 4 cloves garlic
- ¼ tsp. salt
- 1 cup mayonnaise
- 1 tsp. lemon juice
- 1 Tbsp. olive oil
- Mince the garlic, sprinkle it with the salt, and continue mincing. Turn the knife blade parallel to the cutting board and mash the garlic and salt into a paste.
- Put garlic paste in a bowl with the mayonnaise and whisk together. Add lemon juice and whisk again.
- Pour oil in a stream while whisking it into the mayonnaise mixture.
