Quick Aioli

This garlicky mayonnaise is delicious served with grilled asparagus, chilled artichoke leaves, boiled fingerling potatoes.

  • 4 cloves garlic
  • 1⁄4 tsp. salt
  • 1 cup mayonnaise
  • 1 tsp. lemon juice
  • 1 Tbsp. olive oil


  • Mince the garlic, sprinkle it with the salt, and continue mincing. Turn the knife blade parallel to the cutting board and mash the garlic and salt into a paste.
  • Put garlic paste in a bowl with the mayonnaise and whisk together. Add lemon juice and whisk again.
  • Pour oil in a stream while whisking it into the mayonnaise mixture.
