Quick Chicken Pancit

Pancit was introduced to the Philippines by the Chinese and is now a popular local dish. This pancit recipe can be made with beef, pork, seafood, and even hard-cooked eggs, so feel free to use what you have on hand!

Ingredients
- 1 package (6.75 oz.) rice stick noodles or pancit noodles
- 2 Tbsp. vegetable oil, divided
- 2 boneless, skinless chicken breasts (5 oz. each), thinly sliced
- 1 medium onion, peeled and chopped
- 3 cloves garlic, peeled and minced
- 1⁄2 small head cabbage, thinly sliced
- 2 large carrots, peeled and thinly sliced
- 1⁄4 cup soy sauce
Directions
- Place rice noodles in a large bowl and cover with hot water. Let stand until soft, about 10 minutes. Drain and set aside.
- Heat 1 tablespoon oil in a skillet over medium-high heat. Add chicken and cook until browned, about 8 minutes. Remove from the skillet and reserve.
- Add remaining oil to the skillet and heat over medium-high heat. Add onion and garlic and cook for 1 minute, then add cabbage and carrots and cook until tender, about 2 minutes. Add chicken, noodles, and soy sauce and toss to combine. Serve hot.
