Quick and Easy Tartar Sauce
Feel free to increase the flavor by adding more capers. Serve with any baked or fried seafood, or try this with a seafood fondue.

- 2 tsp. capers (about 16), finely chopped
- ½ cup mayonnaise
- 2 tsp. finely chopped onion
- 2 Tbsp. chopped fresh parsley
- 2 Tbsp. chopped pickle
- 2 tsp. lemon juice
- ¼ tsp. lemon zest
- Rinse the capers. Combine capers, mayonnaise, onion, all but a sprig of parsley, pickle and lemon juice and blend well. For best results, refrigerate for at least 1 hour before serving to allow the flavors to blend. Serve with remaining parsley and lemon zest to garnish.
