Quick Homemade Mayonnaise

This simple and super-quick mayonnaise tastes better than store-bought and is much more affordable.

  • 2 large egg yolks
  • 1⁄2 tsp. salt
  • 1 tsp. dry mustard
  • 3 Tbsp. lemon juice
  • 1 1⁄4 cups olive oil


  • Put all ingredients, except the oil, in the food processor. Process for a few seconds.
  • Turn off the machine and scrape down the sides.
  • With the machine running, add the oil in a thin stream. Blend until thick.
