Quick Homemade Mayonnaise
This simple and super-quick mayonnaise tastes better than store-bought and is much more affordable.

- 2 large egg yolks
- 1⁄2 tsp. salt
- 1 tsp. dry mustard
- 3 Tbsp. lemon juice
- 1 1⁄4 cups olive oil
- Put all ingredients, except the oil, in the food processor. Process for a few seconds.
- Turn off the machine and scrape down the sides.
- With the machine running, add the oil in a thin stream. Blend until thick.
